Description:
The Guajillo Chile comes from the "Chile Mirasol" (fresh version). When dried, your skin is smooth and shiny with a deep red.
Main uses:
It combines very well with other chilies such as Chile Ancho, Mulato and Chipotle. The Guajillo Chile (gives a beautiful red color to many broths or soups (stews). Cleaning and removing the seeds is recommended. Usually soaked in hot water and roasted.
The recipes that use Chile Guajillo also include; Pork stew, Wedding Asado, Red Enchiladas, Mole de olla, Red Pozole.
