The pumpkin flower is a flower considered as food in many cultures of the world including the Mexican. Like its fruit (pumpkin), seeds and stems, the flower is edible. Besides being delicious, they are rich in calcium, phosphorus and potassium (ideal for people with cardiovascular diseases, osteoporosis and for pregnant women).
The pumpkin flower can be stewed as a main dish, a common use is in quesadillas, tacos, soups, salads, rice and in sauces.
It is recommended to rinse the flowers carefully with enough clean water to remove the brine and that they do not break.
