It has a slightly smoky flavor and has antioxidant and digestive power. It is called Mexican caviar and the demand for the huitlacoche mushroom does not stop growing.
Huitlacoche can be stewed as a main dish, a common use is huitlacoche quesadillas as well as tacos, tamales and other Mexican snacks.
